Growing up, a plate of warm crescent rolls served with a meal was a highlight! The rolls, however, came from a can and were packed full of preservatives that don’t belong in bread. Now, I can serve crescent rolls that are made with real ingredients and are nutrient dense!

Let me show you how to make these delicious, buttery crescent rolls made with fresh milled flour!

Ingredients

Hard White Wheat – For a soft dough, use hard white wheat berries as the grain. Be sure to weigh the grain berries BEFORE milling for a more accurate measurement.

Butter – I mean, is anything good without butter?! These rolls contain a lot of melted butter, but the result is a soft, buttery bread that will melt in your mouth.

Honey – The honey gives the rolls a perfect, subtle sweetness.

How to Make Crescent Rolls

1) First, weigh your grain berries (520g) first, then mill the wheat into flour for the dough.

2) Combine all of the ingredients in the bowl and mix. The dough will be very soft and a little sticky. Do not add more flour or the dough will become dense and tough.

3) Chill the dough in a covered bowl in the fridge for 1 hour. The chill is important to yield a fluffy crescent roll.

4) After the dough has chilled, divide the dough into four equal parts. Roll each part into a circle and cut the dough into 8 equal pieces with a pizza cutter.

5) To create the rolls, take one of the eight pieces from the circle. Begin at the widest edge and roll the dough towards the point.

6) Once the rolls are shaped, bake at 375 F for 15 minutes. Allow the rolls to cool for 10 minutes before eating.

Frequently Asked Questions

Can I replace the fresh milled flour? Yes! You can use 4 cups of all purpose flour instead of fresh milled flour.

Can I freeze the rolls to bake later? Yes! After shaping the rolls, place them on a cookie sheet and freeze for 1 hour. Then put the frozen rolls in an airtight container and store in the freezer. Bake at 375 F for 15-20 minutes.

If the dough is sticky, how do I roll it out? This bread dough is very soft, but it should be cohesive enough to be rolled out. If it is a little too soft to roll, sprinkle a little flour on the dough and knead it in. Keep sprinkling until the dough can be rolled. Be careful not to add to much, or else the dough will become dense.

  • 215 g melted butter

  • 15 g yeast
