1) Fresh Milled Flour – You can use any type of fresh milled flour in this recipe, however, my personal favorite is the soft white wheat for buttermilk Belgian waffles. Azure Standard offers a wide variety of wheat.
2) Maple Syrup – It is important to use PURE maple syrup rather than a conventional syrup. Conventional syrups contain high fructose corn syrup, caramel coloring, and other preservatives. Stick with the real stuff!
3) Buttermilk – Buttermilk can be found in the dairy section at the grocery store, but if you want to get CRAZY, try making your own butter and using the left over buttermilk in your waffles!
How To Make Fresh Milled Waffles
1) First, measure and mill your grain. It is important to measure the weight of your wheat (according to the recipe) BEFORE you mill. This is a much easier and cleaner process.
2) Mix all of the ingredients together to make the batter.
3) Pour 1/4 cup of batter into the Belgian waffle maker and cook until the light turns green.
4) Top with butter, pure maple syrup, and any other toppings that you enjoy!

Ingredients
227 g soft white wheat berries (before milling)
2 tsp baking powder
4 g salt
70 g melted butter (approx. 5-6 tbsp)
20 g pure maple syrup (or honey)
260 g buttermilk
3 eggs
1/2 tsp vanilla
Directions
- Weigh your grain berries and run it through a mill to make flour.
- Pour flour into a mixing bowl and add baking powder, salt, butter, syrup, milk, eggs, and vanilla.
- Whisk the batter until smooth and combined.
- Scoop 1/4 -1/2 cup of batter and place in hot waffle maker (the amount of batter depends on the size of waffle maker).
- Take the waffle out when the waffle maker indicates that it is done.
- Top with your favorite toppings and enjoy!
Notes
