What is einkorn pasta?

Einkorn pasta is a whole wheat pasta made with einkorn flour. Einkorn is an ancient grain that is not hybridized like modern wheat.

It is higher in protein, has a weaker gluten making it easier to digest, and contains important vitamins and minerals that are lost in today’s common wheat. Einkorn is an excellent grain to eat for easy digestion, especially if you struggle with gluten sensitivity.

Ingredients

  • 4 cups einkorn pasta

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cup milk

  • 4 cups white cheddar cheese

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp smoked paprika

  • 1 tbsp dijon mustard

Directions

  • Fill a large pot with water and set it on the stove on high to boil.
  • Once the water is boiling, add 4 cups of einkorn pasta. Cook the pasta according to the package instructions (approximately 10 minutes).
  • When the pasta is cooked through, drain the water and set the pasta aside.
  • In a separate sauce pot, melt the butter. When the butter is melted, add in the flour and whisk until the flour and butter make a paste.roux for baked mac and cheese
  • Add in the milk and whisk constantly until the mixture begins to thicken.
  • Once the mixture thickens, add in the shredded cheese and continue to whisk until the cheese is completely melted and the sauce is smooth and creamy.
  • If the sauce is too thick AFTER the cheese has melted, add a tablespoon of milk at a time until the sauce is a creamy consistency.
  • When the sauce is complete, turn off the heat and add in the spices and dijon mustard.
  • Whisk the sauce until the spices are fully incorporated.
  • Pour the cheese sauce over the drained einkorn pasta in the large pot and mix it together until all of the noodles are coated.
  • Pour the mac and cheese into a 9×13 pan and top with 1 cup of cheddar cheese.
