Ingredients
4 cups einkorn pasta
2 tbsp butter
2 tbsp flour
2 cup milk
4 cups white cheddar cheese
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp smoked paprika
1 tbsp dijon mustard
Directions
- Fill a large pot with water and set it on the stove on high to boil.
- Once the water is boiling, add 4 cups of einkorn pasta. Cook the pasta according to the package instructions (approximately 10 minutes).
- When the pasta is cooked through, drain the water and set the pasta aside.
- In a separate sauce pot, melt the butter. When the butter is melted, add in the flour and whisk until the flour and butter make a paste.
- Add in the milk and whisk constantly until the mixture begins to thicken.
- Once the mixture thickens, add in the shredded cheese and continue to whisk until the cheese is completely melted and the sauce is smooth and creamy.
- If the sauce is too thick AFTER the cheese has melted, add a tablespoon of milk at a time until the sauce is a creamy consistency.
- When the sauce is complete, turn off the heat and add in the spices and dijon mustard.
- Whisk the sauce until the spices are fully incorporated.
- Pour the cheese sauce over the drained einkorn pasta in the large pot and mix it together until all of the noodles are coated.
- Pour the mac and cheese into a 9×13 pan and top with 1 cup of cheddar cheese.
- Bake at 350 F for 20 minutes. Broil at 500 F for 5 minutes or until the top is bubbly and golden brown.
