These double chocolate spelt muffins are lightly sweet, soft, and fluffy! The whole grain spelt flour adds to the richness and depth of flavor as well as creating a nutritious treat that the whole family will enjoy!

What is spelt flour?

Spelt is an ancient grain that has not been cross-bred like modern wheat. Fresh milled spelt flour is nutrient dense and a great way to increase the nutritional value of your muffins!

Spelt flour is light and soft, perfect for cookies, muffins, and pancakes. It also has a gluten content and makes soft, fluffy bread that other whole grains can’t produce. Spelt, however, does not absorb as much liquid as other grains, therefore you must use 1/4 cup more spelt flour for every cup of regular flour. (The Essential Home-Ground Flour Book)

A good measurement to use is 160 g of spelt per every one cup of regular flour that a recipes calls for if you are converting a non-spelt recipe.

Benefits of Spelt Flour

Spelt flour is easier to digest compared to other types of wheat because it’s gluten structure is more water soluble. Many find that eating spelt baked goods is gentler on the stomach than other types of flour.

Ingredients

  • 320 g spelt flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup cocoa powder

  • 1 stick butter (melted)

  • 1/2 cup pure maple syrup

  • 1/2 cup milk

  • 1/2 cup plain yogurt

  • 1 egg

  • 1 cup chocolate chips

Directions

  • First, weigh out 320 g of spelt wheat berries and mill your flour.
  • In a bowl, combine the flour, baking soda, salt, and cocoa power. Mix together.
  • In a separate bowl, combine the melted butter, yogurt, milk, maple syrup, and egg. Mix together.
  • Pour the wet ingredients into the dry ingredients and mix until combined. (Don’t overmix)
  • Fold in 1 cup of chocolate chips into the batter.
  • Prepare a muffin pan with muffin liners or by greasing the pan with butter.
  • Scoop the batter into each muffin tin.

How to Store Spelt Muffins

For the Week: Once the muffins have completely cooled, store the muffins in an airtight container or sealed plastic bag at room temperature for up to a week.

How to Freeze: Once the muffins have cooled, store them in an airtight container or sealed plastic bag and place them in the freezer. To thaw, put the container of muffins on the counter at room temperature for about 2 hours (or less) while they thaw out.

Can I substitute the spelt flour for all purpose flour? Yes, you can substitute with all purpose flour, although you will miss out on the many health benefits of whole grain. To substitute, replace the spelt with 2 cups of all purpose flour.

What kind of chocolate chips work best? I prefer to use semi-sweet chocolate chips. You could use dark chocolate or use 2 cups of mini chocolate chips for an even chocolate chip dispersion throughout the muffins.

Can I make mini muffins with this recipe? Yes! Bake the mini muffins at 350 F for 15 minutes.
