What is fresh milled spelt flour?
Spelt is an ancient grain that has not been cross-bred like modern wheat. Fresh milled spelt flour is nutrient dense and a great way to increase the nutritional value of your muffins!
Spelt flour is fluffy and soft, perfect for cookies, muffins, and pancakes. It also has a gluten content and makes soft, fluffy bread that other whole grains can’t produce. A good measurement to use is 160 g of spelt per every one cup of regular flour that a recipes calls for if you are converting a non-spelt recipe.

320 g spelt
1 tsp baking soda
1/2 tsp salt
1 stick melted butter
1/2 cup sourcream
1/2 cup buttermilk
1/2 cup pure maple syrup
1 egg
1 cup blueberries
- Streusel
1 cup brown sugar
1/2 cup all purpose flour
4 tbsp melted butter
Directions
- Preheat your oven to 350 F and grease your muffin tin with butter or oil.

- In a bowl, mix the flour, baking soda, and salt. Mix together.

What kind of blueberries should I use? Fresh or frozen? You can use either, but I get the best results with frozen blueberries.
Can I use fresh milled flour for the streusel? While you could mill extra spelt flour for the streusel, I find that the fresh milled flour is too gritty for the streusel. I prefer to stick with organic, unbleached, all purpose flour for streusel toppings.
What are some ingredient substitutes? You could substitute plain Greek yogurt for the sour cream or honey for the maple syrup.
