Sourdough Fresh Milled Pizza Dough
This sourdough fresh milled pizza dough is easy to throw together for a family pizza night! The dough is fluffy, soft, and chewy, the perfect vehicle for all of your favorite toppings!
Every Friday, I love to whip up a batch of this fresh milled pizza dough in the morning and enjoy a family pizza night by dinner! It’s a weekly favorite.
This recipe will teach you how to make the best sourdough fresh milled pizza dough!
Ingredients
1) Sourdough starter – In this recipe, sourdough starter is the leavening agent to make the dough rise. The sourdough will eat away at the gluten as it ferments, making the dough easier to digest.
2) Fresh Milled Flour – It is important that you use hard white wheat or another type of hard wheat berry in order for the dough to rise. I get my organic hard white wheat berries in a 25 lb bag from Azure Standard each month.
3) Toppings – Pick your favorite pizza toppings! If you plan to use meat such as Italian sausage, ground beef, or chicken, cook the meat ahead of time before using it as a topping on your pizza.
How to Make Fresh Milled Pizza Dough
1) Combine fresh milled flour, starter, olive oil, salt, and water in a bowl and mix it.
2) Turn your oven on to preheat to 350 F for 2 minutes, then turn off the oven. This creates a warm proofing space for your dough.
3) Place moist towel over your bowl of dough and place it in the oven to rise for 6-8 hours.
4) After the dough has risen, take out your dough and roll it out to fit your pan, either a large cookie sheet or a large cast iron pan.

5) Top your pizza with your favorite pizza sauce.
6) Next, add your favorite toppings to the pizza, bake, and enjoy!
Frequently Asked Questions
1) Can the dough be frozen? Yes! After the bulk rise, wrap the dough in plastic wrap and store in a tightly sealed gallon bag and place in the freezer. When you are ready to use, pull it out of the freezer and let it thaw and rise before rolling it out.
2) Can I double this recipe? Yes! This recipe is perfect for doubling or tripling to fit your needs!
3) Does my starter need to be active? No! You could use starter from the fridge that has been fed within 2 weeks. It may take the dough a little longer to rise, however. Active starter can speed up the process.

3 cup hard white grain berries BEFORE milling
1/2 cup starter
1 cup warm water
2 tbsp olive oil
1/2 tsp salt
Directions
- Combine the fresh milled flour, oil, starter, and water to create a dough.
- Turn your oven on to preheat to 350 F for 2 minutes, then turn off the oven. This creates a warm proofing space for your dough.
- Place a moist towel over your bowl of dough and place it in the oven to rise for 6-8 hours.
- After the dough has doubled in size, roll the dough out to fit your pan, either a large cookie sheet or a large cast iron pan.
- Top your pizza with your favorite pizza sauce, cheese, and toppings.
- Bake at 500 F for 10-15 minutes until the cheese is golden brown.
- Let the pizza sit for 10 minutes before cutting.
Notes
- Replace the fresh milled flour with 3 cups of all purpose flour.
