Temper the Eggs

In this recipe, eggs provide the protein content of this recipe. To avoid scrambling the eggs in your oatmeal, you will need to temper the eggs.

Tempering the eggs is simply a process to slowly heat up the eggs so that they can be added to something hot without scrambling. The tempered eggs will make your oatmeal deliciously creamy.

First, cook the oats, milk, butter, vanilla, and cinnamon until the oatmeal begins to thicken, then take the pot off the heat.

In a separate bowl, whisk the eggs well. Slowly add in a spoonful of hot oatmeal into the bowl with the eggs. Stir constantly so that the eggs do not scramble.

This warm, creamy oatmeal is packed full of protein that will satisfy your appetite and give you a healthy start to the day!

Ingredients

  • 2 cups rolled oats

  • 2 cups whole milk

  • 1/2 tsp vanilla

  • 1 tbsp butter

  • 1/4 tsp cinnamon

  • 2 eggs

Directions

  • In a pot on the stove, combine oats, milk, butter, vanilla, and cinnamon.
  • Cook on low heat until the liquid is reduced and the mixture is thickened.
  • Take the oatmeal off of the heat.
  • In a separate bowl, crack 2 eggs and whisk with a fork.
  • To temper the eggs, spoon in a tablespoon of hot oatmeal into the bowl of whisked eggs and stir quickly.
  • Continue Step 5 until you have added 5 or more tablespoons of oatmeal to the egg mixture, stirring constantly.
  • Then, combine the egg/oatmeal mixture back into the pot and mix the oatmeal all together.
  • Spoon your oatmeal into a bowl and top with your favorite fruit and sweetener. Enjoy!

Notes

  • To reheat oatmeal, add in a tablespoon of milk as it warms up on the stove and stir. Continue adding milk until the oatmeal is creamy again.
