1 tbsp olive oil
2 tbsp minced garlic
1/2 cup diced onion
12 oz bag of frozen corn
1 diced jalapeno
2 cans white beans (15 oz cans)
2 lbs deboned rabbit meat
1 tbsp salt
1 tbsp oregano
1 1/2 tbsp cumin
1 tsp chili powder
1 tsp smoked paprika
Zest/juice 3 lime
4 cups broth
2 tbsp fresh cilantro
1 block cream cheese (8 oz)
1 cup heavy cream
Directions
- Drizzle the olive oil at the bottom of the pot and turn on the stove.
- When the oil is hot, saute the minced garlic and diced onion until the onions are translucent.
- Next, add the frozen corn, jalapeno, rinsed white beans, rabbit meat and seasonings.
- Add the broth and allow the soup to simmer for 45-60 minutes or until the rabbit meat is cooked through and tender.
- Remove the rabbit meat and shred it with two forks or with an electric mixer.
- Add the shredded rabbit meat back into the soup along with the heavy cream, softened cream cheese, and cilantro.
- Allow the soup to simmer for another 15 minutes while the cream cheese melts.
- Stir the chili to make sure all of the cream cheese is melted and incorporated.
- Serve with corn chips, shredded Mexican cheese, and fresh cilantro.
