Ingredients
4 cups chopped mixed nuts (your choice)
1 1/2 cup pumpkin seeds
2 cups rolled oats
3 cups unsweetened shredded coconut
1/2 cup butter (1 stick)
1 cup raw honey
2 tsp cinnamon
1 tsp almond extract

Directions
- Preheat the oven to 300 F and prep two large cookie sheets by covering with parchment paper.
- Next, chop the mix of nuts with a food processor or by hand (I use almonds and pecans).
- In a large mixing bowl, combine the chopped nuts, oats, pumpkin seeds, and coconut. Mix the dry ingredients.
- In a pan on the stove, melt the stick of butter.
- Once the butter is melted, add the honey, cinnamon, and almond extract. Stir until the ingredients are well combined.
- Pour the warm butter honey mixture over the dry granola.
- Mix the granola thoroughly until it is completely coated with the butter honey mixture.
- Pour half of the batch onto one cookie sheet and spread it out thin on the pan. Do the same with the other half of the granola on the other pan.
- Bake the granola in the oven at 300 F for 10 minutes.
- Remove the granola, give it a thorough mix, and spread it back out on the pans.
- Bake the granola for another 7-10 minutes (watch to make sure it doesn’t turn too brown).
- The granola will still be soft right out of the oven. Allow the granola to sit in the pans until it is completely cooled and hardened.
- Sprinkle a pinch of salt over the granola as it cools (optional).
