Ingredients

  • Organic oats – I prefer to use organic rolled oats in my granola bars. Often times, conventional oats are sprayed with harmful pesticides and glyphosate, so we choose organic. We get a 25 lb bag of organic oats from Azure Standard for a great price!
  • Fresh-Milled Flour – Freshly milled flour contains the most nutrients found in grain which feeds the gut microbiome. It is also a great source of fiber! I add freshly milled flour wherever I can in a recipe.

  • Peanut Butter – It’s important to choose a peanut butter that is simply peanuts and salt, no added sugar. Here is the peanut butter I use.
  • Jelly or Jam – Customize this recipe with any jelly or jam that your family loves or change it out with the seasons!
  • Honey – We love raw, unfiltered honey from Azure Standard! It provides the perfect sweetness to this recipe and keeps the nutritious benefits of the honey intact.

How To Make Peanut Butter & Jelly Baked Granola Bars

  • First, preheat your oven to 350 F and line a 9×13 baking dish with parchment paper.
  • Next, combine the butter, honey, vanilla, flour, baking soda, cinnamon, oats, and peanut butter into a large mixing bowl.
  • Mix the ingredients until well combined.
  • Pour half of the peanut butter oat mixture into the 9×13 pan and press it down firmly until the bottom is completely covered. Cover your hand with a sandwich bag to keep the mixture from sticking to your fingers.
  • Next, pour your jelly or jam over the pressed-down oat mixture and spread out the jam until the oats are completely covered.

  • Sprinkle the remaining peanut butter oat mixture over the jam layer and press down gently (with sandwich bag over hand).
  • Place the pan in the oven and bake for 25 minutes or until golden brown.
  • Allow the granola bars to cool for an hour before removing from the pan and cutting.

Yes, these bars can be placed in a tightly-sealed gallon bag and frozen.

Why is the milled flour written in grams?

Freshly milled flour is fluffier and has more air in it than packed flour from the store. Therefore, a cup of packed flour is not the same as a cup of fresh-milled flour. To provide consistency, I weigh my grain berries for a recipe before milling that way I can just dump in the flour when I’m done. I use 130 g of grain berries to 1 cup of flour.

Can I replace the fresh-milled flour with all purpose flour?

Yes! Replace the 130 g of fresh-milled flour with 1 cup of all purpose flour.

These sweet, delicious baked granola bars bring back the nostalgia of your childhood peanut butter & jelly sandwiches. The layers of peanut butter oats and jelly will have you coming back for more!

Ingredients

  • ¾ salted butter (melted)

  • 1 cup honey

  • 1 tsp vanilla

  • 130 g soft white wheat berries (weigh before milling)

  • 1 tsp cinnamon

  • 1 cup jam or jelly of choice
