Health Benefits of Spelt

- Lowers Cholesterol – Studies have proven that spelt can lower cholesterol and promotes a healthy cardiovascular system. The magnesium in spelt lowers the risk of developing a heart disease.
- Boosts Immune System – The combination of vitamins and minerals including zinc in spelt grain boosts the immune system and healthy energy levels.
- Fiber – Spelt is a great source of fiber. Fiber is necessary for digestive health, regular bowel movements, and detoxing the body on a regular basis.
- Protein – Compared to other grains, spelt is a great source of protein. It helps you to feel fuller and more satiated after eating it.

Ingredients
2 1/2 tsp active dry yeast
1 tsp sugar
265 g warm water
640 g spelt
8 g salt
80 g honey
56 g melted butter (1/4 stick)
2 eggs
- Egg Wash
1 egg
2 tbsp water
Directions
- Activate the yeast by mixing the yeast, sugar, and warm water together. Cover the bowl and allow the yeast to bubble for 5 minutes.
- Weigh the spelt grain berries and mill the flour.
- Once the yeast is activated, add in the spelt flour, salt, honey, butter, and eggs.
- Mix the dough together and allow it to rise for 1 hour or until it is doubled in size.*

- Punch down the dough and weigh the ball of dough (approx. 1,070 g) and divide the total by 12 to find out how much each roll should weigh (approx. 90 g per roll). This keeps the rolls even for rising and baking.
- Weigh and roll each piece of dough into a ball.
- Place the rolls onto a cookie sheet with parchment paper.
- Let the rolls rise for another 20-30 minutes or until doubled in size.
- Brush with an egg wash and bake the rolls at 350 F for 20 minutes or until golden brown.

Notes
- If your dough is in a warm environment, your bread will rise quickly and if you are in a cold environment, it will rise more slowly.

Storage of Spelt Dinner Rolls
- Store baked dinner rolls once they are completely cooled in an airtight container or plastic bag at room temperature.
- To freeze baked dinner rolls, store them in an airtight container or bag once they are completely cooled and freeze for up to 6 months.
- To freeze unbaked rolls, allow the dough to do its first bulk rise. Then divide and roll the dough. Place the rolls on a cookie sheet and freeze. Once frozen, put them in an airtight container and place back into the freezer. When you are ready to bake, lay the frozen rolls onto a cookie sheet and allow them to completely thaw and rise before baking (about 1-2 hours).
FAQ
If your yeast does not become bubbly and foamy, then the yeast is not good yeast or your water was too hot/cold. Get new yeast and try activating again. The water should be warm, but not scalding.
Yes and no. In the end, yeast has to be allowed to do its thing, but you can change the environment to adjust the time it takes. Place the dough in a warm spot (in the sun or next to a warm stove) to rise more quickly. Place the dough in the fridge to rise more slowly.
No, the egg wash is optional but the shiny, golden brown tops on the bread always look pretty!
